Based out of Whatcom County, Washington, Paellaworks has been providing custom menus for catering, event consult and planning since 2003.

Paellaworks provides an interactive experience with a customized catering package prepared on site at your event.
We do require flat and level ground for Paella preparations. We are able to set up in your yard, garage, porches/decks, at trail heads or the most elegant of venues anywhere in the country. We are completely self-sufficient and mobile.
We charge a travel fee for time, fuel and accommodations, when applicable for events outside of Whatcom and Skagit counties.
Our minimum guest count is 25 for services and all menu items are offered at a minimum of 10 portions, after which an increment of 1 additional portion is ok unless otherwise noted.
Paella and Cascadia Boils take approximately two hours to prepare after initial site setup. We typically plan to be on site 2.5 to 3 hours before service is scheduled to occur. Additional itineraries may affect this schedule.
The Initial Quote and Deposit of Intent invoice is based on highest expected guest count, and most often an equal split between potential paella or entree items. Clients then will need to solicit and provide guest choice 1 week prior to the event or choose the Paella/Entree Bar option where we prepare 75% of guest count of each offering to allow for on the spot decision making.
The majority of our Tapas are not subject to this rule and can be ordered in less specific allotments starting at 10 portions. We advise that an assortment of 2-6 Tapas is generally appropriate for Cocktail Hours or Parties depending on your event size and details.
We do not offer rental service directly but can work with you or your event coordinator on appropriate rental(s) and rental companies for your event.
We do offer biodegradable products for your event at cost.
Paella and Cascadia Seafood Boil packages include a locally sourced organic field green dressed and garnished with fresh berries, blue cheese and accompanied by Doughs Bakery baguettes, or Breadfarm olive baguettes.

Paella Mixta: Traditional Allium and Tomato Sofrito with chorizo sausage, chicken thigh, calamari, wild shrimp, mussels or clams & seasonal vegetables $48
Paella Mariscos: Traditional Allium and Tomato Sofrito with yearling oysters, calamari, wild shrimp, mussels or clams, Sockeye salmon & seasonal vegetables. $50
Paella Verduras: Traditional Allium and Tomato Sofrito with Cascadia Mushroom Farm Cosmic Queen and Lions Mane mushrooms, leeks, fennel, heirloom tomato & seasonal vegetables. $40
Paella Carne: Traditional Allium and Tomato Sofrito with Tri Tip steak, Chorizo sausage, chicken thigh & seasonal vegetables. $44
Paella Pata (duck): Traditional Allium and Tomato Sofrito with Duck Breast, Chorizo Sausage, Wild Gulf Prawn, Chicken Thigh & seasonal vegetables. $50
Cascadia Seafood Boil: Our Seafood Boil is an informal community style meal served directly out of a Paella pan with a self-serve Salad and bread station.

Oyster Service:
Raw Bar Service includes your choice of many regional oyster varieties available for purchase by the dozen. Service includes custom mignonette, hot sauce bar and lemon wedges.
Current Market Price: $65.00 per dozen.
For larger events, and depending on event itinerary, we may direct our clients to our friends at Pop Up Oyster Bar for contracted oyster services.

*Our wild caught shrimp/prawns are served traditionally in the shell. If you would like shrimp/prawns peeled please inform.
Bar Packages:
Bar Packages are 1000.00 per event. Included with this package is:
Mast Certified Bartender(s) @ $250 each.
Beer/Wine consult, procurement/delivery to site
presentation and service.
Bar station, rental management, signature drink consult, bar hardware and mixology.
What is not included:
glassware/stemware rental cost
product cost: ice, wine, beer, cider, liquor/mixers, and garnish
Sangria Service:
House made Rioja, Rosè or Blanco: Apple, Stone Fruit, Berry, Orange.
$150.00 per US Gallon. 5 Gallon Minimum.
N/A Beverages:
Rosemary-Ginger Lemonade.
Hibiscus-Apple non alcoholic spritzer.
Blood Orange or Peach-Mint iced tea.
$50.00 Per US Gallon, 3 Gallon Minimum.
General Staffing:
Paellaworks can provide limited general staffing for set up, light clean up and table services/bussing, rental management and bartending. This service is $250 per staff member and a separate line on itemized Invoice from our menu packages which include labor to prepare and present menu items buffet style.
We reserve the right to assess your event and provide the necessary labor to fulfill your hospitality needs or to direct you to a staffing agency if we cannot provide staffing scope for your event.
Booking Policy & Information:
Please provide: Name, phone number, email, and billing address of the person responsible for remittance. There will be two (2) Invoices generated.The first Invoice is the Deposit of Intent and is 40% of your total Itemized Invoice and is due upon receipt to confirm and hold your date.
A full refund is available up until 90 days prior to your event date. Date(s) are not confirmed until Deposit of Intent Invoice remittance.
Final Invoices are due for remittance along with final confirmation of guest numbers, menu and services provided, the calendar week prior to your event date. By committing remittance of the Deposit of Intent, The Client, (Whomever is the invoice addressee/entity) and Paellaworks LLC, (The Provider) do voluntarily enter a legally binding contract and agreement for full Invoice(s) remittance before the occurrence of service on your pre determined event date unless otherwise stipulated in writing.You may remit payment directly and securely by credit card or ACH Bank Transfer directly through the email sent via Paellaworks using the Quickbooks/Intuit Merchant Services Online secure link. Preliminary Quote(s) are not contractual and do not include applicable City, County and State Tax, or Gratuity, but will include Travel/Lodging surcharge if applicable.
An auto Gratuity is added at 12% for all events over 50 guests.

Paella means pan in both Spanish & Catalan, and it is this pan, wide and shallow, that allows for the caramelized flavors of garlic, onion, tomato, and fresh rosemary sofrito to meld.Valencian rice, (arroz) is then added and slowly simmered in handmade citrus saffron stock. The arroz is then garnished with appropriate ingredients for the type of arroz being made. A wide array of seafood, meat, game and poultry as well as charcuterie is available, complimented by fresh seasonal vegetables, which are then steamed by the simmering rice and stock, creating a medley of flavor and texture greater than the sum of its parts.
WHERE AND HOW IS ARROZ COOKED?
Arroz & Paella was traditionally cooked over open fire, but due to the reality of urban settings, the use of propane fueled paella burners is utilized for most events, allowing the paella to be cooked on/in your veranda, carport, front yard, or any other feasible indoor/outdoor location. We will gladly build a grapewood fire in your front yard or office parking lot though!
HOW MANY PEOPLE CAN PAELLA FEED?
Private/Corporate Paella catering packages start at a minimum of twenty five guests.
Arroz is available in vegetarian and vegan options, and can be tailored to most food allergy specific situations.
